It is vaulted in stone and brick and rests on a central pillar.
The floor is still paved with its original flag stones laid directly on the earthen surface.
- In the centre the cooking area with its three modes of cooking: bracket and trammel/ soup cauldron, baking oven, and roasting spit,
- and the smoking rooms on either side (for sausages, hams etc.)
The roasting spit operates with an invention designed by Leonardo da Vinci. It uses the force of the rising hot air to operate a propeller which in turn, by an ingenious gear system, rotates the two spits, the speed of which can be regulated by a double trap.
It is thought that this spit was installed by the de Fieux family around 1650. It is still in operation today and provides excellent roasted meats, though it needs a long preparation for the fire.
